My (mama's) Chicken Dumplings

4 or more Chicken peices with the bone and skin (thighs do better IMO)
Salt/Pepper to taste
Water
1 cup flour

Add salt/pepper and chicken to a pot. Boil for an hour. When Chicken in done cooking remove from pot but do NOT throw away the broth.
Remove chicken from bone and skin. Tear/cut into bite sized peices and place back in pot. Turn on pot to boil. Before pot is boiling mix flour, salt/pepper in a bowl. Take broth from pot and add to dry mixture. Mix into a sticky dough. When broth is boiling add bite sized peices of dough into boiling water. Let simmer for 15 minutes then serve.

It's a really cheap meal when the food budget is tight. Since it's just 2 of us I usually use 2 thighs and 2 legs.

this is one of my favourite recipes. and it takes hardly any time at all.

Prep and Cook Time:
17 min.
Ingredients:
1 (16 ounce) package wide egg noodles
2 (5 ounce) cans chunk chicken, drained
2 (10.75 ounce) cans condensed cream of mushroom
soup
1/2 teaspoon garlic salt
1/2 teaspoon ground black pepper
101 Recipes in a Flash

Directions:
Bring a large pot of lightly salted water to a
boil. Add pasta and cook for 8 to 10 minutes or
until al dente; drain. Return pasta to pot with
chicken, soup, garlic salt and pepper over
medium heat. Heat through, 5 minutes.

Something I love to do for five ingredients or less is marinading. I marinade a meat then grill it and a veggie. So one I just did was shrimp in this lemon marinade: 2 lemons (squeezed), 1 tbs olive oil, 1 tsp fresh parsley. I let it marinade for a few hours then tossed it on the grill. Also, tossed some asparagus on the grill and it was an easy dinner YUMMY!

Another one I like to do is a Spicy Soy: 3 tbs soy sauce (I like to use low sodium soy), 1 tsp crushed red pepper, 1 tsp honey. This one I like to use with pork but you can also use with beef. I braised some leeks with this on the grill.

I have a few more on my blog.

My husband and I were trying to cut down our costs by reducing the amount of meat we consume and I stumbled across this recipe that became one of our favorites.

Prep Time: 20 minutes
Cook Time: 10 minutes
Ingredients:

1Tbsp. oil
4 cups sliced zucchini
1 onion, chopped
1 tsp. dried basil leaves
1/2 tsp. salt
1/8 tsp. pepper
3 tomatoes, sliced
1 cup shredded Havarti cheese

Preparation:
Heat oil in heavy skillet or wok. Add zucchini and onion; stir fry 3-4 minutes until onion is crisp tender. Add seasonings.
Then layer tomatoes over vegetables and sprinkle cheese over all. Cook over medium heat 2-3 minutes until cheese is
melted. Serve over hot cooked rice. 4 servings

Thanks! I will try this. I used to make almost the same thing, but was layered & then put in the oven. The veggies never really cooked at the same level (zuc crispy, but tomatoe soggy). This seems like a much better way!

Creamy Chicken & Rice

~3-4 Chicken Breast
~2 cans cream of mushroom soup
~1 package of cream cheese
~Rice

Cook chicken in crock pot, or boil until cooked (I usually sprinkle with seasoned salt). Once chicken is coooked shred or cube, and then add soup and cram cheese. Serve over rice. Very Easy and Very yummy. For those that don't like mushrooms I HATE mushrooms but you really can't taste them in this.

VERY GOOD, and Very easy!!!

Easy Chicken and Dumplings

4 chicken breast
2 cans butter biscuits
2 large cans chicken broth
pepper to taste

Put broth in a stock pot on high heat on stove. Slice chicken breasts into cubes and cook in broth. Cut biscuits into bit size pieces and add to pot. Cook about 15-30 minute until biscuits cooked throughout. Add pepper to tase.

Chicken pot pie

pack of 2 frozen deep dish pie crust, can of mixed vegetables, can of chicken gravy, 1lb. or so of chicken. thaw out pie crust while cooking chicken, cut up chicken boil it, put chicken in pie crust drain vegetables put in, can of chicken gravy on top salt and pepper, put other pie crust on tip cut a couple of slits in it bake in oven everyone in the family loves it
