CHICKEN ENCHILADAS
1 lb chicken (cubed or shredded)
8-12oz cheddar cheese
enchilada sauce
tortillas
sour cream (optional)
Cook chicken, in a seperate pan warm enchilada sauce.
Dip tortillas in enchilada sauce
Fill tortillas with chicken, roll and place in casserole dish (9x13)
After all tortillas are rolled in casserole dish pour remaining sauce over the top
Cover enchiladas and sauce with cheddar cheese
Bake 30mins @ 350* or until cheese is bubbly
Top with sour cream after it cooks (optional)
