CHICKEN ENCHILADAS

1 lb chicken (cubed or shredded)
8-12oz cheddar cheese
enchilada sauce
tortillas
sour cream (optional)

Cook chicken, in a seperate pan warm enchilada sauce.
Dip tortillas in enchilada sauce
Fill tortillas with chicken, roll and place in casserole dish (9x13)
After all tortillas are rolled in casserole dish pour remaining sauce over the top
Cover enchiladas and sauce with cheddar cheese
Bake 30mins @ 350* or until cheese is bubbly
Top with sour cream after it cooks (optional)
Mmmm.....ENJOY!

crock pot london broil

2lbs london broil
1 can cream of mushroom soup
1 can condensed tomato soup
1 pkg dry onion soup mix

Place meat in bottom of crockpot-you can cut to fit if needed. Mix mushroom and tomato soup and pour over beef. Sprinkled dry onion soup over top. Cover and cook on low 8-10 hours.

You could also use flank steak. This is the best way I have ever had london broil. When I have previously done it in the oven it was always too tough. This recipe is delish.

Bacon Cheeseburger Pasta

1 lb Ground Beef
6 slices bacon
1 can condensed tomato soup
1 cup sharp cheddar cheese
2 cups uncooked pasta (we use mini penne)

In large skillet cook bacon until done; drain on paper towels and crumble.
Brown ground beef in skillet, drain. Cook pasta according to directions on box; drain and stir in tomato soup, beef, bacon, and cheese. Heat on low until cheese is melted.
This is very similar to a hamburger helper style dish. We dip ours in bbq sauce, it's super easy so I usually make it about once a month.

Baked Chicken Breasts

4 chicken breasts
1 can cream of chicken soup
4 slices Swiss cheese
Pepperidge Farm stuffing
Butter

Place breasts in baking dish. Top with cheese slices and pour chicken soup over them. Top with stuffing, and drizzle with melted butter. Bake at 325 for about an hour, or until chicken is cooked through and cheese is bubbly.

1 lb package of smoked sausage
4-5 potatoes
2 cans of green beans

Cut up sausage and potatoes into bite size pieces and put in crock pot. Pour in green beans. Cook all day on low.

Yummy!! House smells great too!

just a quick little side note to Kims post........Ive also seen(and posted )this recipe as "swiss chicken casserole"......honestly all...if you can find the "cream of chicken WITH HERBS"it takes a simple recipe over the TOP

KIM, this is a dumb question, but what do you do to the stuffing before you put it on top of the chicken?

Chili Mac

1 box macaroni and cheese mix
1 (14oz)can hot dog chili
1/4 c shredded cheddar cheese

Make mac according to box,add chili heat a few minutes,sorinkle w/cheese and serve
