I am looking for easy, cheap and good sauces to dress up our noodles. I found a recipe and made one tonight it was pretty good. I have to admit that tonight was the first time I made a sauce without a seasoning packet.
Tomato Cream Sauce
1 can chopped tomatoes, or 8 plum tomatoes skinned and chopped w/ juice (I used petite diced tomatoes)
2 cloves of garlic, chopped
1/2 minced onion (I used dehydrated ones, next time I will use real onions)
1 tbsp olive oil
1 cup of whipping cream
Fresh basil, torn
salt and pepper to taste
Heat oil in a sauce pot over med heat and add onion and garlic. Saute until onion is soft. Add tomatoes and salt and pepper. Simmer for 10 min.
Add cream, reserving 2 tbsp. Let the sauce simmer for 20 minutes until slightly reduced.
Add the last 2 tbsp of cream at the last minute.
Sprinkle with fresh basil. Serve over fusili or linguine pasta. (I served it over penne pasta)
The sauce kinda reminded me of the Knorr Parma Rosa Sauce. I did use too much salt this time. My dd's liked it. Dh is working tonight so I don't know if it is omething he will eat.
Any other yummy sauce recipes out there?
