Dh just started a new shift and will be leaving the house around 10 am. I would like to give him a good filling meal before he leaves. You know something more original than eggs and bacon or pancakes. Thanks!

I'm not sure how 'healthy' this is - but it would be a good side to something else. I made this dish for my coworkers today. We take turns bringing 'breakfast' to our weekly meetings and I forgot until 10:30 last night that it was my turn so had to just go with what I had on hand. It was very good and enjoyed by everyone - super easy too!

Apple Cake

1 can apple pie filling
1 yellow or spice cake mix
3 eggs
1 t cinnamon
3 t sugar

Mix apple, cake mix and eggs together well and pour 1/2 in 9 x 13 pan. Mix cinnamon and sugar together and sprinkle over batter, then put the rest of the batter on top. Bake 30-35 minutes. (I added some nutmeg and cloves too.)

This would be a good substitute for donuts, apple fritters, etc. that you might buy in the store. I would serve it with eggs, meat and maybe fresh fruit for a good 'filling' meal. Maybe a fun breakfast on birthdays.

I'm looking forward to stealing others ideas to use to take to work!
