I use ground venison in the same dishes I use hamburger--tacos, sloppy joes, hamburger helper, meat sauce or meatballs w/ spaghetti, meatloaf, etc. Just don't overcook it because it is so lean it will dry out quickly.
And you could take the brats out of the casings and just use it like sausage--it's really good mixed into your meatloaf, meat balls, or meat sauce for spaghetti!

A trick that I use is to add beef bouillon to the ground venison when browing in the pan. Also add garlic & onion. It will help take the "game" taste out of it.
Here are some recipes that I've tried:

I alway mix mine with hamburger, or ground turkey. half and half, so it does not get dried out. But I too use it for any recipe that good old ground beef goes in!

Yeah, use it just like ground beef! I've never made plain old bugers with it though- just in hot dishes, casseroles, chili, soup and meat loaf type of things.
As far as the brats go, I've used this recipe many times:
"faux bangers and mash" - an idea I got from the Rose and Crown restaurant at Disney!
put 1/2 can of beer in fry pan and lightly fry brats
slice up 1 small head of cabbage and put on top of brats after they've cooked through
prepare beef gravy (use beef stock, a gravy packet or boullion)
prepare mashed potatoes (use real or instant works fine as well)
put mashed potatoes on plate, top with cooked cabbage (tastes great when cooked with brats!!!), place brat on side and top everything with gravy...my DH loves this recipe! The girls even like it.

The best thing I have found to disguise the taste is Venison Chili...use your own recipe or I have one if you would like it. You try making meatballs with it. Mix it with some ground pork. HTH!

Disguise the taste of venison? You must be nuts. I LOVE venison! I'd eat that over beef any day!

I wasn't really trying to hide the tase, wanted ideas for use. But also something the kids would like. They thought the taste was a tad strong. I will mix it with ground pork that is currently B1G1F.

Deer Meat Loaf
~ 1 1/2 pounds ground deer
~ 2 eggs
~ 1 can (8 ounces) tomato sauce
~ 1 medium onion, finely chopped
~ 1 cup dry bread crumbs
~ 1 1/2 teaspoons salt
~ 1/8 tsp pepper
~ 1/2 tsp garlic powder
~ 2 tbsp brown sugar
~ 2 tbsp spicy brown mustard
~ 2 tbsp vinegar
In a large bowl, lightly beat eggs. Add tomato sauce, onion, bread crumbs, salt, pepper and garlic powder.
Add deer meat and mix well. Press into an ungreased 9 x 5 x 3 loaf pan.
Combine brown sugar, mustard and vinegar; pour over meat loaf.
Bake, uncovered, at 350 degrees for 70 minutes.
I found this recipe and I have a question for anyone. I am not a mustard fan, can I sub something else?
