4 1/2 c blueberry
1 pkg dry pectin
5 c sugar
1 Tbs lime zest
1/3 c lime juice

Crush blueberries one layer at a time.
Mix crushed blueberries and pectin in a large saucepot.
Bring to a boil, stirring frequently.
Add sugar, stirring til dissolved.
Stir in grated lime peel and lime juice.
Return to a rolling boil.
Boil hard 1 minute, stirring constantly.
remove from heat.
Skim foam if necessary.
Ladle hot jam into hot jars, leaving 1/4-inch headspace.
Adjust two-piece caps.
Process 15 min in a boiling water canner.
Yield: about 6 half-pints.

7 c apple juice
1 c red cinnamon candies
8 c sugar
2 box Sure-Jell
1/2 tsp butter

Put juice and cinn candies into large saucepan.
Heat and stir to melt candies.
Measure sugar into a seperate bowl.
Stir in sure jell.
Add butter.
Bring to a rolling boil,stirring constantly.
Quickly stir in all sugar.
Return to full rolling boil and boil EXACTLY 1 min,stirring constantly.
Remove from heat.
Skim off foam and ladle into pint jars leaving 0.125 inch head space.
Process in a boiling water bath for 5 min.

This also makes for great gifts for fall and xmas.

2 qtss strawberry, cut and crushed to yield 5 c crushed berries
7 c sugar
1/2 tsp butter
1 box powder Sure-Jell

Pour crushed berries into large boiler.
Measure sugar into seperate container and set aside.
Stir package of Sure-Jell into strawberries.
4Add butter.
Bring berries and Sure-Jell to a full rolling boil (a boil that does not stop bubbling when stirred) then add sugar.
Stir constantly.
Stir in sugar, quickly.
Return mixture to a full rolling boil and boil exactly 1 minute, stirring constantly.
Remove from heat.
Skim foam from top with metal spoon.
Ladle quickly into jars that have been cleaned and preheated.
Clean rims of jars with clean hot cloth.
Place heated lids (lids that have been placed in simmering water for 1 minute) on jars and tighten rings.
Place jars in water bath canner for 5 min, then remove from canner, turn jars upside down for 5 minutes.
Return jars to upright position and let cool completely before storing.

*NOTE*
Turning the jars upside for 1/2 the cool time helps to keep all the fruit from going to the top and makes for a prettier jar

3 c. shredded zucchini (raw)
3 c. sugar
1/4 c. lemon juice
1 sm. can crushed pineapple
1 sm. pkg. apricot or orange/pineapple Jell-O

-Boil together all except Jell-O for 10 minutes.
-Remove from heat and add Jell-O; mix.
-Put in containers and refrigerate or freeze immediately.

Thanks Trudy!! I made this yesterday, I did berry blue, berry cherry, strawberry, and grape, wow, it was so easy, I was just in the mood to can, so now we have lots of jelly sitting around, and it does taste good, and your are right, they are so pretty!! I have always made the real jellies, but this was so quick and easy it will work great for PB&J sandwiches, and the PB&J pizza DH likes, and save the other stuff for rolls and toast, etc. I am so excited to come across this recipe, thanks again!!!

I really hope your post motivates others to try it...it doesnt get any easier than that!!

and I am soooo glad you liked the results!!!(The blue is my favorite as far as the color!!!Pretty huh?!You wanna leave em set out to look at them )

although with the seeds and such I don't think this is the prettiest jam Ive ever made it is one of my dh favorites the flavor is actually fantastic!!


3 c chopped peeled kiwi
1 pkg dry pectin
1 c unsweetened pineapple juice
4 c sugar

Mix kiwi, pectin and pineapple juice in a large saucepan.
Bring to a boil stirring constantly.
Add sugar, stirring til disolved.
Return to a rolling boil.
Boil hard for 1 min,stirring constantly.
Remove from heat-skim off foam.
7Ladle into clean hot jars leaving 1/4 in head space.
Process 10 min in a boiling water bath at altitudes up to 1000 feet.

Makes about 4 1/2 pints.

I am a first time canner this year, I am looking forword to learning tones of things on. This all seems very scary! I want to do a good job! I have nothing yet as far as canning items, not sure where to even beginning? Of course the garden but after that?

Thanks for any comments???

My biggest suggestion would be to start before the garden.

Try something simple....the kool aid jelly would be good or even a different kind...jams and jellies are all pretty basic and simple.

Although canning really isnt necessarily hard...it does feel overwhelming at first.(The size of the canner-all the jars laid out-a pan for boiling the lids-the huge pot your cooking ~whatever~in...just the visual is intimidating )

The biggest thing you really wanna build is your own confidence.Trust me though..once you hear your first set of jars "pinging" as they seal you'll be addicted!!!

Keep an eye out for jars at yards sales also...the season is coming and that's a great way to pick some up cheap.You can also get some (at least we can here)at big lots.Watch the prices though....save a lot has some too(you'd think they'd be cheaper)but are same price as wal mart.

Do you have a water bath canner?a pressure canner?or both.(some things-esp meats-have to be pressure canned)

Thats my best straight out of the gates advice...feel free to ask any more direct questions....I'm here to help!!

Thank you very much. I actually got some jars from a family member and I did go to Save A Lot for my lids. I don't have any type of canner yet. I was reading up about both, but for starters I think I will just be doing fruits and veggies. Would a water bath canner do just fine then? What is the kool aid jelly?
