12 oz chopped raw bacon
1 small white onion, chopped
5 button mushrooms, chopped
1 1/2 lbs extra-lean ground beef
1 egg
1/4 c evaporated milk
6 oz shredded Swiss cheese, divided
1/2 c corn flake crumbs

Preheat oven to 350 .

Cook bacon,drain on paper towels.

Remove all but about 1 Tbs of bacon grease,saute onions and mushrooms til soft.


Add a baked potatoe w/green onions n sour cream and some fresh green beans...mmmmmmm....heavenly
Mix beef, egg, and milk , onion and mushrooms. Mix in about 4 oz of Swiss cheese, and all but 1 Tbs bacon. Stir in cornflake crumbs, and mix til well blended. Shape into a loaf, and place in a meatloaf pan.

Bake 1 hour.

Drain fat, and sprinkle w/rest of cheese and bacon.

Bake another 5 min or so ,til cheese is melted.
