Default Onion Cheese quiche with double crust

pastry for double crust pie
4 egss
2 cups shredded sharp cheese
1 large onion, quartered and sliced
4 strips bacon, cooked and crumbled
salt & pepper to taste

Line a 9-in pie plate with 1 pie crust.

In bowl, beat eggs. Add cheese, onion, bacon and salt and pepper, mixing well. Add egg mixture to pie crust. Place 2nd pie crust over egg mixture. Flute edges and cut slits in top.

Bake at 375 for 35 minutes, if edges of pie crusts get too brown, loosely cover the edges with foil.

***I also sprinkle grated cheese over the top of this, as soon as it comes out of the oven.

Oh, I LOVE quiche!!! I have never had one with a double crust, though. I will have to try this Thanks!

I love quiche!!!!! My favorite has swiss cheese onion and bacon and I always use extra of those ingredients cause there is something about Swiss cheese onion and bacon alone. the bacon is precooked. chopped onion chopped swiss cheese and bacon pieces I have to smack myself because I will literally gobble it out of the bowl!
