Default Chicken & Rice recipe?

Does anyone have a tried and true Chicken & Rice casserole recipe? I've tried several and they always end up too dry. Also, if it makes a difference, I use brown rice, rather than white.

This is a crockpot version, not necessarily a casserole. But it is yummy!!

3 or 4 chicken breasts (if you use boneless you will need a can of chicken broth). Cook several hours on low.
Once cooked shred. There should be about 1/2 cup juices in the bottom. If not add some chicken broth. Put chicken back in crockpot add two cans cream of mushroom soup, can of mushrooms (optional), a little more than 1/2 a 16 ounce container sour cream, 1/4 cup flour. Heat then serve over cooked rice.

This is so easy that oldest ds makes it alot. It is one of our families favorite meals.

Mine isn't a casserole, but still easy and yummy. I got this recipe from MIL.
You need 2 chicken breasts, one can of Veg-all, one can cream of chicken soup, milk, thyme, and rice.
Bake 2 chicken breasts in oven until done, then shred.
Mix veg-all and undiluted cream of chicken in saucepan. Add milk to desired consistency and add thyme. I don't measure the milk or the thyme. I make my sauce thinner than my MIL and DH likes it better, I probably use a 1/2 teaspoon or so of thyme. Serve over rice with chicken. I usually use 2 cups of Minute Rice.
