Salmon with Maple Syrup & Almonds
from Cooking Light

6 (6 oz) salmon fillets
Cooking Spray
1/4 c. packed brown sugar
1/4 c. maple syrup
3 T. low sodium soy sauce
1 T. Dijon mustard
1/4 t. black pepper
4 t. sliced almonds, toasted

1. Preheat oven to 425 degrees.
2. Place fillets in a 13x9 baking dish coated with cooking spray. Combine sugar, syrup, soy sauce, mustard, and pepper; pour over fillets. Cover with foil; bake for 10 minutes. Remove foil; sprinkle fillets with almonds. Bake an additional 10 minutes, or until fish flakes easily with a fork. Serve with sugar mixture.
