Mediterranean Shrimp with Feta
1 lb. all purpose potatoes, peeled & thinly sliced
8 oz. green beans, trimmed & halved diagonally
1 med. zucchini, halved lengthwise & thinly sliced
2 t. olive oil
1 med onion, thinly sliced
1 red bell pepper, coarsely chopped
2 garlic cloves, minced
1 can (28 oz) crushed tomatoes with juice
1 lb. medium shrimp, peeled & deveined, with tails attached
1/4 c. dry white wine
1/2 t. dried oregano
1/2 t. salt
1/4 t. freshly ground black pepper
2 oz. feta cheese, crumbled
3 T. chopped Italian parsley
1. Heat oven to 375 degrees
2. Place the potatoes in a large pan and add water to cover. Bring to a boil, and cook for 7 minutes. Add the green beans and zucchini, and cook for 3 minutes longer. Drain the vegetables in a colander & transfer to a large bowl.
3. Meanwhile, in a medium no-stick skillet, heat oil over med. heat. Add the onions, bell peppers and garlic, and cook for 3 minutes, or until softened. Add the onion mixture to the bowl with the other vegetables.
4. Add the tomatoes and their juice, the shrimp, wine, oregano, salt and pepper to the vegetables, and toss to combine. Transfer the mixture to an 11x7-inch baking dish, cover with foil, and bake for 25 minutes.
5. Uncover the dish and sprinkle the feta on top. Bake, uncovered, for 3 minutes longer.
6. Remove from oven and sprinkle with parsely.
