Let me tell you, I was NERVOUS about this! We have a huge sunday school class & they passed around a sign up sheet for breakfast last week, so I signed up for this week. UGH then I paniced! LOL

I made raspberry, banana nut, & apple cinnamon muffins from Jiffy mix, blueberry coffee cake also from Jiffy mix. Then I made breakfast burritos & eggum casserole from recipes I found on here...Oh & I bought a 4 pk of sugar free banana nut muffins just incase anyone was on no sugar diet. IT WAS A HIT! I brought very little food home! Here's the recipes:

Breakfast Burritos

Ingredients:
12 to 16 eggs, beaten
1 lb ground sausage, cooked (or crumbled links)
1/2 cup chunky salsa
2 cups cheddar cheese, shredded
24 large flour tortillas

Optional Ingrediants:
1 green pepper, finely diced
6 potatoes, shredded and fried
jalapeno, sliced or diced
1 can chopped green chilies
1-2 clove garlic, finely minced
1 onion, finely diced
1 tomato, peeled and chopped
2 green onions, sliced with tops

Directions:
1. Scramble eggs in large skillet until cooked. Stir in cooked sausage. Add any of the extras you choose. Save the salsa and shredded cheese.

2. Wrap the Tortillas in a damp paper towel and warm in the microwave until they are warm (about 1 minute).

3. Place 1/2 cup of scrambled egg mixture into a tortilla. Then add a little of the shredded cheese and a spoonful of the salsa. Then roll burrito-style.

To Freeze:
Wrap each burrito in foil and freeze in single layer on a cookie sheet. When fully frozen transfer wrapped burritos to large zip-top freezer bags and freeze.

To Serve:
Remove foil and wrap in a paper towel. Cook for about 2 minutes in the microwave. Cook times may vary depending on how microwave power.
I didn't freeze, but I did make them the day before, so when I reheated the whole thing, I put a wet dishcloth over the entire dish & put it in the oven. Left the rag on there until time to serve & it worked wonders! Put moisture back into the shells..also, I only used burger, eggs, & salsa on this. YUM!

Eggum Casserole

16 eggs
10 strips of bacon(I used 1pound package),
5 large mushrooms(I used 1 can, drained),
1 1/2 C. shredded cheddar cheese(I used 1 8 ounce block),
1/2 C. Sour Cream,
4 Green onions,Chopped,
Salt and Pepper,

Spray pan(9x13) with pam.Pre-Heat the oven to 350 degrees.

Fry and crumble bacon.Set aside.Slice mushrooms,Green onions and set aside.

Scramble eggs,Place eggs then bacon,then mushrooms.then cheese,add dallops of sour cream over mixture.Sprinkle with green onions.

Bake 20-25 minutes(I did mine for about 17 minutes and it came out done at that time)Until warmed through and cheese is bubbly.

Serve with slices of tomato and slices of avacado drizzled with lemon juice so they don't get brown.
