OKAY.....

SO CHRISTYK HAS SOME REALLY BIG CHALLENGES GOING IN THE :happy dance: HEALTH AND FITNESS FORUM:happy dance:

LOTS GOING ON WITH WORK OUT BUDDIES,CHATS,ETC AND FIGURED WE COULD TRY TO HELP OUT WITH ANY LOW FAT~FAT FREE~SUGAR FREE~LOW CAL.....ANY RECIPES IN THAT THEME.

MY SISTER WAS BORN DIABETIC (SHOTS 2X A DAY AND SUCH FOR YEARS AS SOME OF YOU ALREADY KNOW)SO I HAVE ALREADY STARTED POSTING SOME SUGAR/FAT FREE STUFF THAT SHE USES AND REALLY LIKES.

POST EM HERE...OR CHRISTYK HAS A STICKY THREAD IN HER FORUM IF YA WANNA POST THERE(SHE'LL APPRECIATE IT EITHER PLACE )

I found this from the Hungry Girl website (they have a ton of great recipes! I am still pretty much computer illterate and not sure how to link to the website- hence why I still don't have an avatar!).

I forget what they call this one- but I love it- I have it memorized! It is almost like Starbucks Strawberries and Creme Frap!

3 large icecubes
6 frozen strawberries (I believe it calls for 1/2 a cup- I can pretty much eye it now!)
5 oz light vanilla soy milk
1 oz warm water with 2 tsp dissolved fat free french vanilla creamer
3 packets equal sugar
1 oz fat free strawberry syrup (I had to go to a health food store for this one!)

I "aerate" for about 25 seconds (til there is no chunks!) and blend for about an additional 35 seconds. You can top it with fat free Reddi Whip- I personally don't- to save on calories- and let me tell you it is close enough that I have not gone to Starbucks and blew out my caloric intake! I hope everyone enjoys this refreshing healthy- makes you feel guilty as you are drinking it treat!

1 lb ground chicken
2/3 c herb stuffing mix, crushed into fine crumbs
1/4 c grated Parmesan cheese
1 egg
1 c diced onion
1/2 tsp salt
1/2 tsp pepper
1 pinch garlic pepper seasoning
2 tsp ketchup
2 tsp bbq sauce


Preheat oven to 350
Mix all well and pat into a bread loaf pan.
Bake 50 minutes. Turn oven off and let sit in hot oven for an additional 15 minutes.


This is soooo good!!!

Default Sun Dried Tomato Pasta Salad

8 oz rotini pasta
1 large tomato (chopped)
1 medium green pepper (chopped)
1 medium red pepper (chopped)
1 can sliced black olives
1 small onion (chopped)
1/4 c parmesan cheese
1 (8oz)sun-dried tomato salad dressing (they make a fat free version)


Cook pasta according to directions, about 8 minutes.
Chop tomato, peppers and onion into very small pieces,mix w/drained olives.
Drain Rotini and rinse with cold water for about 3 minutes.
Mix pasta with tomato, peppers, onion and olives.
Put in the refrigerator for about 1/2 an hour.
Add salad dressing and mix well.
Add Parmesan cheese and mix well.
Serve immediately.
If you have left overs, You will have to"re-wet" it by adding a little more salad dressing the next day, especially if you subsitute the dressing with a fat-free dressing.

Happy Asian Pasta Salad

8 ounces dry linguine
3 c broccoli florets
12 cherry tomatoes (halved)
4 green onions (sliced)
2 large carrots (sliced diagonally)
1/4 c soy sauce
2 Tbs sesame seeds (toasted)
2 Tbs brown sugar (you can sub splenda)
2 tablespoons dark sesame oil
1 Tbs lemon juice
1/4 tsp hot sauce
2 garlic cloves (minced)

In large pot with boiling water, cook pasta. (about 8 min)
Drain, rinse pasta with cold water and let drain again. Place pasta in a large salad bowl, add broccoli, next 3 ingredients and toss well.
In a small bowl or jar with lid, combine soy sauce and remaining 6 ingredients. Whisk together or cover tightly and shake vigorously. Pour mixture over pasta and toss gently.

Just some ideas(and maybe save you a little time reading labels)some of the things I buy are....

skim milk (I grew up always drinking 2% cause that's what my sister had to have but just slowly cut back to skim and now reg milk grosses me out...and whole milk now-forget it)

I buy Scwhebels light bread(white and wheat)are 35 calories...and that's for "2" slices :happy dance:

for butter I like the blue bonnet light.

I always do fat free sour cream....alone(like as a dip)I think the flavor may be just slightly off of reg...but not enough to dislike it and on tacos and stuff I can't tell the difference at all.

I also like the red fat cream cheese.

no difference for me either w/the new 2% velveeta.

kraft also now has the bags of fat free shredded cheese which I like.

although I haven't bought ALL the baked chips...I do buy the tosito baked scoop tortilla chips and love em.....only taste diff for me is I think they taste FRESHER (although they are pricier than reg)

fat free cool whip is also deliscious!!!

I also like alot of the light salad dressings but I find my favorites are always the asian ones-(I have yet to try an asian light dressing that taste any diff from the regular)I also like the good season sun dried tomato dressing...

I'm sure theres tons of others but those are a few of my staples.

Here is a recipe for a salsa if you want to call it that.
There is no fat in this.

Texas Caviar

1 can corn(drained)
1 can diced tomatoes
2 cans blackeyed peas(drain & wash peas)
1 can rotel(drain & save some of juice)
1 large jar thick & chunky Pace picante sauce
1 med onion diced
juice of 4 limes
*Mix the lime juice & onion & set aside until all other ingredients are mixed.
*you can add more lime juice to taste.
*taste best after refrigerated overnight
*serve with corn chips
