Chicken Jambalaya -$10
What i love most about this recipe is that most of the ingredients are a cheap buy and everything else is in my spice rack!

Ingredients:
1.) cubed chicken
2.) 2 tablespoons butter
3.) 1/3 cup chopped or sliced carrots
4.) 1/3 cup chopped celery
5.) 1/2 can (12 oz) black beans
6.) 1/4 cup chopped onion
7.) 1 ( 14.5 oz) can tomato sauce
8.) 1 1/2 cups chicken broth
9.) 2/3 cup white rice
10.) 1 tsp. dried thyme
11.) 1/2 tsp garlic salt (or use 1/4 tsp chopped garlic and a pinch of salt)
12.) 1/4 tsp. ground black pepper
13.)1 bay leaf
14. 1/2 tsp. hot pepper flakes

DIRECTIONS
Melt butter in a large skillet over medium low heat. Add celery, onion and carrots and saute until tender. Stir in tomatoe sauce, chicken broth, rice, black beans, thyme, garlic salt, ground black pepper, hot pepper flakes and bay leaf.

Bring all to a boil; reduce heat, cover and simmer for about 20 minutes or until rice is tender. Stir in chicken and cook until heated through. Remove bay leaf and serve.

*** not sure if you consider hot pepper flakes and bay leaves a common spice, but i always have them in my spice rack.

So - how is the winner of this contest being determined?
Is someone going to try all the recipes to see which is best tasting?
or is this a random pull out of a hat thing if you enter?
cause I will start puttin more recipes up if this is based on how many you post...
TIA
