I think in your mind you may have already answered your question. Seems like you are keen on the two classes, and unsure of the third. If they aren't dependant on eachother (ie: you don't have to do the third to get the first two) then maybe you should just stick with what you can handle.
You have to consider what would be sacrificed by taking all three. Who would look after the kids? Would you have to pay a babysitter? Would you have time to cook, be frugal etc. or would some of the extra money be spent on convenience foods?
If you will be able to pick up another class in the future then theres your extra money for the roof. You'll feel "smart", and make some extra cash to boot.
