Default Tomatoes- this is really easy!!

I just wanted to share another use for tomatoes for all of you that have your gardens. Ours finally started coming in and I have tons of them now... I've been canning them but DH wanted some salsa- all the recipes I found had tons of ingredients that I didnt have on hand but I found this one thats just 5 ingredients and it was so easy... (it is time consuming though)

5lbs peeled/sliced tomatoes
3 c chopped onion (I used vidalia so it would be so spicy)
1 c. chopped pepper (I used jalepeno- but you can use what ever to suit your taste- this made a mild salsa)
1 c cider vinegar
3 1/2 tsp salt.

Simmer it for a least an hour, longer depending on how thick you want it. Then you fill your jars and process like you would regular tomatoes.

I had so many tomatoes that I made a double batch yesterday- it made 7 quarts (I used this size because DH eats salsa pretty fast). I did have to buy the peppers and onions, already had the vinegar and salt- so it ended up costing about $3- not bad since a small jar costs that much in the grocery store!
