For just empty plastic bottles:
Glow stick insects: We'd have little kids make these when we went camping or for late bbq nights. We'd decorate them with pipe cleaners, felt, construction paper, etc. To make legs, wings, antennas or what not and then when it was dark drop one of the little mini glow sticks into them. The bottle doesn't have to be clear as long as it's see through. The colored bottles (like green ginger ale bottles) always seemed to be more popular though.
sand Bottles Layers of colored sand, simple and classic. And if you do it outside no clean up lol. You can also put a little bit of sand on wax paper and roll chalk across it until it's that color instead of buying colored sand. I wonder if food coloring would work (or vinegar and food coloring) once it's dry and no longer colored mud.
Bottle shakers basically homemade morroccas. Fill with rice, beans, etc and decorate.
I SPY Bottles Need a see through bottle. Fill with rice and miscellaneous tiny objects (keep track of what you put in) and then decorate and cover with paper, duct tape, etc etc until you have just a window left. And then try to spy different objects.
Wave maker Again, clear or see through bottle. Fill halfway with tap water and a few drops of food coloring. Glitter etc can also be added. Fill the rest of the way with clear vegetable oil. Put some glue around the threads and screw on the cap. Rock sideways to make waves.
One's that aren't see through are great for bowling if you fill them with sand
