My boys will not eat sandwiches (or lots of other things!) They always get a go-gurt. Sometimes there is crackers with pb on them, or crackers with cheese. Sometimes plain old crackers of various types. I have taken tortillas and rolled them up with cheese in them. You could use other fillings if you child will eat them. The schools use yogurt as a main course, so I figure I can too, and just fill in with other things they like.

I am glad I came to this thread. All of you ladies have some great ideas that I have never thought of packing for my kidos. They will enjoy the variety this year it think.
Pinwheels have been a real hit with my 6th grader. They are soo easy to. You just make a wrap filled with whatever they want and them slice the wrap into 1/3 to 1/2 in slices. I usually make one wrap and divide the slices or"pinwheels" amongst the 2 girls.

I was going to suggest pinwheels, too. My kids love those. I was on Nutritious Lunch Ideas and they had a lot of ideas for lunches, too. One idea they list is scrambled eggs...I'd bet my DS would love that for lunch!

I didn't read all of the posts so sorry if this was mentioned! When my kids where going to school I packed their lunch every day. Their favorite when it was cold out was soup. We have those campbell's thermos (sp?) and they did that. We also used it for left over spaghetti or spaghetti o's. If we had meatload for dinner they would do a cold meatload sandwich.

Cold pasta salads - so many things you can add to make it different each time. Seeds, nuts, cheese, veggies, fruits (dried cranberries/ apples yum!), meats, etc, etc.
Wraps - You can wrap anything up in a flour tortilla - cream cheese, cheese, avocado, beans, rice, meats, veggies, fruits, nuts seeds, etc. So many different varieties, a different on each day and it still seems completely different. (I wrap mine in waxed paper and cut and stuff in baggie.
other cold salads (Chicken salad, tuna salad, egg salad, etc) with crackers
Hummus (protein) and veggies

My kids wont do a thermos either- maybe once a year with soup if it a cold rainy day.
here's what we do when sandwhiches get boring.
Wraps- you can even get flavored tortillas now. Fill with any sandwich filling you like- or make it veggie- add coleslaw and cucumbers and tomatoes. You can put cold grilled chick in( leftovers or purchased) and putin some salsa, and cheese for a chicken soft taco.
Homeade lunchables. Cut up cheese ( or buy the premade shapes) salami, peperoni, ham, whatever and crackers.
Sandwiches on different bread- sub bread, pumpernickel, rolls, ect. sometimes just altering the appearance makes it more appealing. Try using mustard instead of mayoo r using miracle whip. Anything to make it not the same all the time.
Toast the bread before you make it into a sandwich and make it like a club sandwich in a restaurant.
Pasta salad
chef salad. - zillions of possibilities here.
bagels with cream cheese or peanut butter. You can get mini bagles, flavored bagles, and flavored cream cheeses. lots of combinations for variety.
sides- yogurt, fresh fruit, . Cut up strawberries, chunks of melon, anything is season. Trail mix baggies with cheerios, cookies, .
Pretty mcuh my kids lunches consist of the "main" thing- wrap, pasta salad, ect, and a lot of those little snack size baggies of sides. It;s usually stuff you would see on an appetizer tray- little bacs of crackers, mini carrots, slices of cucumbers, ect, ect.

what about a muffin? Just choose the flavours she likes (mexican/ corn and sour cream etc) even left over green curry, roast veggies or other dinners go well in a savoury muffin. I have been making these for DH as he rushes through lunch; all too much hassle, but if he just has to bite a muffin he eats it.

I tried to read thru the suggestions, but one I didn't see is quesadillas. My kids LOVE them. We also do "build-your-own-tacos" where I put in a flour tortilla and other items in little ziploc bags & they think it's fun to put together.

I just wanted to add to the other wonderful muffin suggestions:
"breakfast" muffins with ham and cheese chunks baked in;
PB&J muffins;
corn-dog muffins -- mini corn muffins with your choice (a healthier variety) cut up hot dog baked in...
also, plain old lunchmeat/cheese sandwiches are more fun if they are served creatively, like in a pita, on a bagel, cut into shapes with a cookie cutter, etc.
I love the idea of cold pasta salads, because you can really fit carbs, protein, and veggies all in one dish!
I'm in agreement with the others who've stated that going with all sides (fruit, crackers, yogurt, etc) is fine if you're filling the rest of her day with healthy choices too.

mine are just starting grade school and i have never thought of cooking up the stuff before!! duhhh, I started making the homemade lunchables they told me they like it better! Instead of crackers for pizza i use bread and cut into shapes thats they omly idea i have
