I use to throw a lot of leftovers away because they would get lost in the fridge. Now, when I plan my meals for the month, I make Sundays leftover day. I put all the leftovers from the week's meals together on the same shelf in the fridge. On Sunday, I empty the shelf and either make new meals out of simple ingrediants or reheat. Nothing goes back in. I choose Sunday since it is usually a lazy day where we stay home and snack alot during the day. It is a good day for a light, easy meal.

We throw away very little food around our house. I plan my menus and plan leftovers. For instance, we had roast w/ potatoes, onions & carrots tonight. When we finished our meal, I added string beans, okra, tomatoes, corn, butterbeans to make a soup for tomorrow's supper. Both meals were crock pot meals and use little effort to make but both are delicious.

We live near family so if we have a large amount of leftovers that don't reheat well for the next day, we take them dinner!

Sometimes we freeze things like browned hamburger meat or chili and save it for a time when we are in a time pinch!

If there is only a little leftovers, I usually eat it for lunch the next day or serve it to the kids with an added veggie.

Food simply costs too much to throw that money down the drain!

I have a idea for the celery after using it for your recipe or whatever you use it for. Chop it fine with onions and saute it with butter, put in freezer for when you make stuffing.just like when the bread is getting to that dry stage I cut it into squares and dry them out stick it back into the freezer, when it is time to make stuffing combine with stock, seasonings and bake.

I would say that we throw away almost no food at all. We almost never have lefts overs. And if we do, it is eaten the next day. Perhaps only making enough food at a time, not extra is the key?

One thing I have done when I have made too much food that I know we wont eat is to take it to an elderly neighbor.Being that the elderly will not usually cook a big meal for just one person. But they love the "home cooking" so sometimes if it is a small portion but just right for one person I take it to her.

I throw away more than I would like but it really isn't too much. I only fix supper 2-3 night a week and I always make sure I make enough to have leftovers. I LOVE leftovers! I send them with DH for lunch at work. I also eat them for lunch or supper for myself. If it's something DD will eat (which isn't much) she will eat them for supper as well (or lunch if it isn't a school day).

I came from a big family and always make too much!
I started:
Feezing leftovers in single serve bowls in the freezer for homemade tv dinners.
Saving all of those last bits of vegetables, meats and rice in a ziplock bag in the freezer. When it gets full I'm going to add tomato juice or v-8 juice and make vegetable stew in the crockpot.
I always make leftover roast into beaf and noodles over mashed potatoes the next day.

At first, Im not concern about saving food but since the economy is down, I have to conserve every resource I have including food.

I buy things with good intentions, but end up losing out. I recently spent $200 at Whole Foods - well, as we know, organics don't last so long. I had a reaction to a new med and then got sick with a bad cold, so I wasn't able to do the chopping and standing required for cooking the way I planned. I just cleaned it out - a roast (over $10!), asparagus, ears of corn for the grill, and other things, including 2 fresh - made salsas. It was heartbreaking. Such good intentions.

And, by the way, on that trip I also purchased the little balls that are supposed to make things in the crisper last longer. Didn't work well. I had some fresh berries go bad after 1 day.
