Oh help me. I try not to complain but today I just have to vent. I'm not having a very good frugal cooking week.
Over the weekend I baked some chicken legs and thighs that I had previously frozen in a lemon marinade. It was a pack I lost in the bottom of the chest freezer and decided to finally defrost and bake. Sadly, part of it was freezer burned but that didn't seem to affect it too much. The marinade did work but the chicken didn't turn out tasting that great. I'm going to debone the rest and think of something else to do with it but overall the results were only so-so.
It gets worse ...
Last night I made beef stew. I had stew meat in the freezer and that was fine but I decided to not buy any more potatoes because I still had two 5-lb sacks leftover (2 different kinds of potatoes) from a previous shopping trip. Well, when I went to use the potatoes, one sack was completely useless (it was actually moldy!) and the other one was nearly useless. I eventually picked through to find enough potatoes for the stew then added more carrots to make up the difference. On top of it, I added some beef we had left over in the refrigerator from a previous meal that I wanted to use up. Perhaps that was a mistake as it tastes a little off and now the idea of eating what is left of the stew is unappetizing.
It gets worse though ...
A couple of days ago I made carrot cake muffins for me (I'm gluten-free). They're really good. I went to have one for a snack today, though, and as I went to take a bite I noticed that the shreds of carrot inside the muffin are
GREEN
It was freshly grated carrot too. Oh yuck. I'll probably have to throw away all the carrot muffins I made.
It's just the last straw. This cooking frugally is making me want to go out to dinner. I'm going to go bang my head on the side of the refrigerator door now.
