Many of us end up throwing away food. Let's come up with a list of what we can make with everyday food or how to transform leftovers into another meal.

Bananas
-Freeze them to use in baking later. I just freeze them in their peel. Defrost alittle till it's squishy, cut the tip off, and squirt it out. It may look gross to some but you can still bake with them.

Mashed potatoes
-Make shepherds pie and put yesterday's mashed potatoes on top.

I save leftover vegetables from supper in the freezer and use them to make vegetable soup after I make a pot roast.

mashed potatoes-potatoes cakes

leftover chicken-chicken salad, or chicken tacos or fajita

leftover corn on the cob-take off cob and put in scrabled eggs

day old bread-bread crumbs, or bread pudding.

leftover rice- rice pudding

leftover vegetables-stew or vegetable soup

leftover baked potatoes -slice into slices and brown in a pan with a little olive oil, add onions and mushrooms.

Leftover steak - cut into small cubes, brown add condensed soup and can of mixed veggies (or leftover veggies) also any leftover barley or pasta or rice. Makes a hearty lunch or a lite dinner.

Baked potatoes - Twice baked potatoes.

Honestly, very few leftovers make it past the next day at lunch in our house.

leftover taco meat-add to a box of BC augratin potatoes and bake per instructions on box.
Mashed potatoes-twice baked or potato patties
Steak or beef roast los-make into a soup
leftover gravy-add to homemade soup

Leftover steak, roast, chicken or ham I either make into sandwiches or use in salads for lunches. Ham is either fried or cubed and used in scalloped potatoes.

Most everything at our house is just re-heated and eaten for lunches or a left-over night.

Leftover taco meat

-Scramble eggs, add the taco meat and heat through. Roll up in a flour tortilla for a breakfast burrito. Add salsa if you want.
