Yes! About a year ago I had gotten a bunch of string cheese from Target free and froze them. They freeze and thaw well, no problem.

I think String cheese has a weird texture and taste after its been frozen.
I am not usually a picky freezer food person either

you can also make the breaded cheese sticks and freeze. Dip the sticks in egg and roll in bread crumbs, fry up and freeze them as a batch.
