Here is another recipe from my mother that I use alot when freezing corn. The corn comes out of the freezer crisp and fresh tasting like fresh corn.

9 cups of corn (cut off the cob)
3 cup. water
1/4 cup sugar
1 Tablespoon of salt.

Boil for 5 minutes and cool. Put in freezer bags and freeze. When ready to cook for a meal just cook like you would any other frozen corn. It is delicious.

I love canning - I made blackberry jelly, caramel spice pear butter, sweet relish, orange marmalade, sauerkraut, cinnamon "pickles", dill pickles, bread and butter pickles, cucumber chow chow, salsa, tomatoes, spaghetti sauce, and apple butter (I think that's it?)

I froze tomatoes too, green peppers and peas.

I plan on drying herbs this year.

I love to can too. We grow a garden every year and I can about all summer and it is delicious in the winter. I buy very little groceries year around. I can and freeze: peas lima beans, green beans, corn, okra, squash, pickles (all kinds), sour kraut, onions, peppers(hot and mild), salsa, spagetti sauce, tomatoe juice, vegetable soup, apple jelly, grape jelly, blueberry jam, strawberry jam, potatoes, apple sauce, and I freeze fruit for pies and ice cream, etc.

If it can be canned or frozen and we eat it, I can it. I have already started this year. The strawberries are already ready for picking and my strawberry jam is already made. I made blueberry jam this morning.

My husband and my son love to hunt too so I dont buy very much meat either. Most of my grocery shopping is for spices, dairy, that sort of thing.

I have planted spices this year so I hope they do well, I have never tried to do spices.

What I do is can my tomatoes and then as I need spagetti sauce I make a huge batch and freeze into meal sized portions. This way I don't have to worry about having a whole bunch of jarred spagetti sauce that we may not eat. I like doing this too because I use my tomatoes in so many different things. This way I'm not locked into spagetti only. I have some recipes that even though I prefer to use my own tomatoes will still taste ok if I use store bought and some that don't. This gives me greater flexability.
