you might want to check with your local college/university. our local university has a program that teaches butchering and then they sell the meat to cover costs. I have gotten some really great deals through them. It's not set up like a regular butcher shop--it's a classroom building that I walked into, told the receptionist what I wanted and they brought my stuff out. I got some really great pork roasts, shrink wrapped, for about $1.50 a pound. They were on average 5# roasts.
