Save money on meat by cutting your own.

I went to Sam's club to get pork items and my hubby found this LEG, which was 70Cents cheaper a pound then the items already cut. Sorry about the blurriness of the picture, and the missing head (my hubby took this pic-lol)
And here is everything that I got out of it:  Two Roasts and 15 Pork Chops

the more the butcher handles the meat, the more expensive it is. The larger/less prepped meats will always be cheaper. Something that is cut, debones, butterflied will be the most expensive.

It drives my husband crazy that I won't buy the meat and cut it myself. Well, first of all would I need a meat saw or slicing device? You didn't just use a big, really sharp knife, did you?

I too purchase my meats uncut from Costco and cut it myself...I just use a really sharp knife. I have had friends say they slightly freeze their meats before cutting as they find it makes it even easier (I don't generally do this but have on occassion with chicken that I'm slicing into thin strips).

Heh, you have a pork loin there - it's from the back of the pig.
I always cut my own. And that includes right on up to a whole animal (deer especially).
I do not have a meat saw. I can cut up an entire deer with 3 knives (I have a skinning knife I live, it's almost circle shaped) a sharp heavy knife, and a fillet knife). I have a cheap knife sharpener from Walmart - it is about 2"x2" and has a coarse and fine sharpening side. Finally, but most expensive, I have a good quality meat grinder (from Northern Industrial Tool). No meat saws, no craziness.
For cleanliness, if you want to be way up to standard (and beyond) wash your surfaces with a bleach solution - 10% is about the max I use - and let that solution soak for about 10 minutes. Wipe that off, let dry, and then do all your cutting at that station at once. For packing, I either use my beloved FoodSaver, or you can wrap meal portions tightly in plastic wrap, then in freezer paper (it's right in the same area at the store, Reynolds makes it I think), label, and put in the freezer!

This is all I need to cut up a whole deer (minus grinding). Shows my knives. One bowl is for big cuts, one for small cuts to grind or stew, one for scraps.
