or a big pot roast

I usually have 2 days worth of meals, one usually to fry up the potatoes, carrots and onions with the beef.... and another meal of BBQ sandwiches

I cook several whole chickens at a time. I can make chicken and dumplings for a meal, chicken salad for a meal, chicken pot pie and chicken taco.

I like to cook a whole ham and have ham dinner, ham salad, ham and hashbrown casserole, ham and potato soup.

Baked chicken or pot roast. Though we tend to like beef better, you can pretty much do the same left overs with both.

hot sandwiches with gravy
pot pie
fried rice
soup or stew
quesadilla's
BBQ sandwich
over biscuits
on pizza

Once in awhile I'll make a meatloaf in an 9X13 size. The large portion we don't eat for dinner I cut up into smaller portions and freeze. Then when I'm making lasagna, goulash, spaghetti, sloppy joes, etc. later on, I can add some for a little zip (I usually use grnd beef, grnd pork and hot italian sausage in the meatloaf).

It also makes great sandwiches the next day.

I second the pot roast and whole chicken. It's very convenient to have the cooked meat ready to go.

Ground turkey or beef cooked in taco seasoning gets a lot of play at my house, too. We use it in tacos, burritos, tostadas, nachos, taco salads, mixed with pasta and scrambled with eggs, to name a few. It also freezes well.
