The few times we have got pumpkins, I havent done anything with them. We carve them up and that's it. They just get carved out. I dont know how to use the the meat to do anything and dont know if I can once they've been carved and dried out.
I dont even remember how to roast the seeds.

That's why we dont always get pumpkins.

I am making pumpkin bread with the meat of my pumpkin and whole grain bread with the roasted seeds.

It's easy to use pumpkins in cooking. All you have to do is chop the pumpkin in half, scrape out the pulp, and roast it cut side down in the oven for an hour at 375. When you can prick the pumpkin with a fork and it's soft then it's done. Scoop out the meat with a spoon or an ice cream scoop and either mash it or puree it in a food processor. That's it that's all.

To roast the seeds wash them off, sprinkle them with salt, and roast them in the oven at 375 until they are browned and dry. Stir them part way through. I think I do mine for about 20 minutes or so. Just keep checking them if you aren't sure how long to roast them for. When you cool one off and you like how well it's done then take em out

It's much cheaper than the canned stuff too. I was looking at a can of pumpkin pure and it was $4.50. So I went over into the produce section and bought a medium sweet pumpkin for $1.60. That pumpkin will make twice the amount I would have gotten in a can. The only thing is you have to make sure you grab sweet pumpkins. Jack-o-lantern pumpkins are too large, not sweet enough, too stringy, and too sparse of meat to use for roasting.

When I process my pumpkin, I just stab it a few times with a meat fork, knock off the stem, and put the thing into the oven whole. I pull out the middle oven rack and set the pumpkin on a cookie sheet on the bottom rack. After it's soft (about an hour), it's easy to split open. Then I scoop out the seeds and gunk, and scrape all the meat from the skin. I do this with winter squash, also. It beats fighting with those tough-to-cut rinds.

I just made pumpkin apple muffins. Yummy and not very much sugar...uses applesauce instead...i liked them and i dont even like pumpkin!

I chop my pumpkin up and stick it in the crockpot...Easy Peasy!

Just google pumpkin recipies. I like chewy pumpkin cookies, bread, pie, ice cream, pudding, pancakes. Not fond of soup though some say they like it.

I roast, scoop, puree, then freeze by 2 cup portions what is not getting immediately used. Add spices when I do use it

Pumpkin Icecream, yes! Let vanilla ice cream/frozen yogart soften a bit add pumpkin and pp spice, mix well and refreeze. Eddy's is the only brand I can find that sells this and they only do so breifly right before T-Day, so if I have a craving I am forced to make my own.

It might even taste good mixed with plain vanilla yogart. If anyone has tried this let me know.
