Let's make a list of what to do with leftovers.

1. Take to work the next day for lunch.
2. Have a leftover supper day.
3. Chili = always better the next day
chili dogs
4. Mashed potatoes = Shepherd's Pie
5. Taco meat = Mix it in with scramble eggs and make a breakfast burrito.

mashed potatoes
latkes: press into pattie shapes and fry. sprinkle on a little dill while frying if desired. serve with sour cream. quick yummy side dish.
pierogies: mix in a little fried onion, shredded cheese, cottage cheese and salt/pepper.
dough recipe - Combine 2 c. flour and 1/2 tsp salt. Add (precombined) 2 lg eggs and 2 oz of softened cream cheese. Mix 20 sec once crumbly. Add water, starting at 4 Tbsp, one TB at a time until ball forms (takes me 5-6). Process/mix 6 seconds. Rest 20 min. Roll 1/16" thick on floured surface. cut into sections with knife or use large round cookie cutter to cut. Add filling. Fold, seal. Boil in salted water until floats. Use as desired - a)Pan fry in butter and onions until golden brown. b) use in chicken soup as a noodle variation c)bake in oven with meat of choice and veggies d)bake with sauerkraut and pork on stovetop
make potato bread

chili
-grilled cheese sandwiches with cold chili on top - quick yummy lunch. add a chicken patty inside the sandwich to make it even better.
-freeze and defrost later in the week for baked potato bar
-chili cheese fries as a snack

pork/porkchops
-add to stir-fry
-mix in with jambalaya and eat alone or stuff into bell peppers/tomatoes (also yummy with chicken)

Little bits and odd ends of leftovers:

Put them all in a 9x13 pan with some cooked pasta, or diced tomatos, sprinkle with cheese, and bake to make a casserole.
