Ok, so lunches are kind of a no brainer. Sandwich and a baggie of chips but I need something for breakfasts on the way to work. I have to leave the house at 6am. I don't want to buy the prepackaged jimmy dean stuff or spend $ on gas station food. I'm trying to stay w/in our groc. budget of $250 for 4. Since I got a job, I don't want to waste my money on convenience foods. Any suggestions?

Pre-make "egg mcmuffins" and freeze them. They thaw quickly in the microwave, and my kids and dh love them (I am a vegetarian!). Also, try using a tortilla to wrap things like eggs (which you can scramble in the microwave in a glass bowl in under a minute!), cheese, taco meat, even peanut butter and jelly!!!

how about premaking a bunch of pancakes on a day off and freezing them. Before you go to work take 2 pancakes out, pop in the micro, smear peanut butter on them and turn into a Pancake and Peanut Butter sandwich.

I do the mcmuffin type things too. For dh, though, who won;t eat eggs I make a big batch of biscuits and thick ham slices. He does just ham and biscuit usually and pops into the microwave to heat up. So much healthier and cheaper than pre-packaged and you can make a bunch and freeze. You could add egg/cheese/bacon or whatever you wanted.

HTH!
