I feel so frugal and "earthy" all at the same time! This year I decided to plant a veggie garden, not knowing too much about it and it is going well. Today I had about 20 jalepino peppers and decided to can them for the winter. Well it worked out very well and I think they sealed ok. I will definitely do this with the next bunch.

I also finally scrounged up a small bucket (with a lid...bonus!) for under my sink to hold compostable garbage. Until I get a big bin, my Mom just told me to dig a hole in an empty part of the garden and bury it. I feel much better not having so much organic waste going in the landfill.

Yes, I feel pretty good about myself when I look at my garden and the things that I have canned. No, we couldn't survive the entire winter on what I've done but I figure this is at least a start!

I wish there was a way to preserve cherry tomatoes. We planted 4 plants to have tomatoes for our daily salads... I have filled my 3 gallon mixing bowl 4 times! The plants are now 4.5 feet high and are still producing.

We are going to be canning salsa, hot pepper relish, hot pepper rings, vegetable soup, spaghetti sauce, and marinara.

I need to figure out what I can do with eggplant, I have 8 plants (4 white for black.)

I will be so sad to see my garden put to bed

That's great!! Keep up the good work!

You'll love kitchen composting! I first line mine with an old bread bag, then a decomposable made out of corn bag. Every few days I empty it into our large composter, and once a week run it through the dishwasher.
