Default eating a low carb frugal diet

OK, the dr. just put me on a new medicine. The nurse neglected to tell me that I was supposed to switch to a very low carb, no sugar diet, and I was sick for 5 days, but now that the nurse has cleared that up for me, I'm just wondering how I'm going to eat this way frugally. I'm pretty sure that I'm a carb addict, so it's going to be rough anyway. This is probably for the long haul, and DH would also like to cut back on his carb consumption, so it will be most of our food expenses. DS will be the only one getting the junky carbs, and we're already somewhat selective on those. Any suggestions would be great!

Hi, I found this great website that shows the carb counts on 1000's of foods. It looks like if you sprout beans, they stay low carb and those are fairly inexpensive. Hope this helps!!

I have a few products that I use with my diabetes that are MAJOR favorites

I'm a carb addict as well, and I do not like soy products but I LOVE spaghetti! Dreamfield's pasta is a lifesaver. It's 'real' spaghetti but 'infused' with inulin fiber. What they call a serving is more than I can eat and it doesn't crank up my blood sugars. It's GREAT

Carb smart ice cream,, again, tastes and FEELS like real ice cream but reduced carb and again, doesn't impact my blood sugar.

Hood Calorie Countdown *formerly known as carb countdown* is the low carb milk product that I use. I don't drink a lot of milk, but when I want it and on cereal or in hot cereals and such. It has a VERY long expiration date compared to regular milk, so it doesn't go bad if you're not a big milk user/drinker.

That's all I have at the moment, but they're products I highly recommend to every carb addicted diabetic I meet, so hopefully, at least one of those will help you out

For snacks I eat hard boiled eggs, pork rinds, nuts, and sugar-free instant jello with frozen whipped topping. If you buy whole milik, you can mix it with half water for half the price, carbs and calories. This makes an approximate 2% milk that is indistinguishable from 2% milk. I use this to make my puddings, to drink, and anywhere milk is called for. For dessert recipes you might want to check out my blot at The Diabetic Pastry Chef.
