Eating Out to Much/Soccer Activity 2 to 4 nights a week

Please Help!
We have two kids playing soccer. My husband and I are coaching thier times. We do not have time to go home to eat supper on the nights we have supper. We can have soccer two to four times a week. That is alot of eating out. If we don't eat out it is 8 p.m. before we can even start to cook. We pick up our kids from grandmother. Does anyone have any suggestions on things we could take to grandmothers or put in a cooler the nights we have soccer so we don't have to eat out.

You could do crock pot meals! Have a big cooking day on Sunday and freeze, pull out when you need it and heat up in the oven or microwave. Have a sandwhich night with chips and some cut up veggies!

Make ahead pasta dinners like bertolli. One box of linguini cooked just under al dente. Pasta sauce frozen into ice cube trays with a little water. Mini meatballs/uncooked peeled and devained medium shrimp only, ect. cook 10 minutes covered over medium to medium high heat, stir occasionally and done.

Vegetable stir fry's in a bag. Stir fry vegs that are frozen, canned sauce from ethnic section(again ice cube trays), and chicken strips/medium shrimp, ect.

Lasagna that is made ahead

baked ziti

casseroles that are made ahead and frozen--defrost in fridge and microwave to heat

Bagged salad with bagged chicken strips and soup

crock pot all in one meals--beef roast with a bag of stew vegetables from the freezer section and low sodium onion soup mix and a jar of low sodium gravy poured over top.

fajitas-sliced onion and peppers with chicken/steak and tortillas. Serve with salsa and sour cream.

joe corbi pizza's/frozen pizzas

chicken nuggets and fries that are baked-usually done at the same time

chili baked potatoes--heat chili while potatoes are cooking in the microwave--add cheese and sour cream

If you haven't tried them, the vegetable steam bags are great for vegs.

Thin cuts of meat cook faster. Add steamed vegs and something like zatarains precooked rice in a pouch.--10 minutes, done

I have 3 kids playing soccer this season and the crock pot has become my best friend. I also prepare some meals ahead of time and freeze them.

If you are looking to eat at the soccer times, think about using a cooler to keep things hot not cold (you may get sick of cold meals). You could have stew, soup, chili etc. They also make coolers you can plug into your car that keeps things warm.

Also, a crock pot is my best friend when things get really busy. You can fill it up the night before and put the removable liner in the fridge. If you are using potatoes ... I suggest cutting and place them in a bowl full of water or they will turn brown.

I think the most important thing is to plan ahead and have it ready the night before.

I have this problem on Mondays with dance. Next week I'm going to pack a picnic type of supper that we can eat there instead of eating out (sandwiches, chips in individual bags, water, pudding, fresh fruit).
