Ook ladies, I am kinda new at the freezing of veggies. I hear everyone else saving bits for soups and such. My neighbor bought organic mushrooms and gave me a bunch, too many to eat before they go bad. Any ideas for them? Can I chop them up and freeze them? If I can, do I thaw them for soups and such or toss them in frozen? What other veggies can be frozen? I love veggie soup, and this would cut down on my waste. Thank you for your help!

Uncooked mushrooms do not freeze well. You can however, cook them and freeze them in amts to add to soups, stews etc You don't need to thaw them necessarily in order to add them to soup or stew.

Just clean them (try not to rinse them with water as mushrooms absorb a lot of water, just use a clean kitchen towel to clean them on the outside), trim them and slice them. Saute them in oil until lightly browned, and let them cool before you store them in plastic containers or baggies.

A lot of vegetables can be frozen for later use. Some should be blanched before freezing. It seemed easier to find a chart for ya! LOL!
