Mexican is cheap and easy if your family will eat tacos and burritos.
Spaghetti and goulash
You can cook potatoes in a crock pot. Wash and dry them. I wrap them individually in foil and cook them on low. By the time you get home you can either serve them with a main dish or have a baked potato bar.
Anything in the crock pot works great when you are on the go like chili, pot roast, etc.

My time saving tip is to do as much as you can the night before or that morning before you are off and running. When I make Baked Chicken I mix up the coating mixture so it's ready when I get home. I've also chopped up onion and put it in the fridge so it's ready to go also that evening.

Breakfast for dinner night - eggs, toast, pancakes, sausage

Rollups - roll whatevers on sale (chicken strips and lettuce with dressing, ham and cheese, etc) up in tortillas...easy to do assembly line style since you have to make so many for the big family - Sams or BJs usually has cheap bagged salad to use as a side

Cheeseburger Mac n Cheese - big batch of boxed mac n cheese with browned hamburger mixed in

On the nights we have to do alot of running we have sandwiches. I know it doesn't sound glamourous but it will work in a pinch. We also do taco's, breakfast, tortillia roll-ups, soup and grilled cheese sandwiches, beans and cornbread.

I hope one of these ideas help.
