Does anyone have a vegtable beef soup recipe that is wheat free. DH made a pot roast on Sunday and I would like to use the beef up in a soup. Any ideas are welcome.

When I make my from the pot roast I just take the juice that the roast was cooked in and add the meat, potatoes, and carrots (cut them up in bite sizes), add some water (if needed) and a can or 1/2 a bag of mixed vegs. Add a little spices and simmer for about 45 to 55 minutes. Serve with bread or rolls.

I did what you said but didn't have any of the beef juice left so I used tomato juice and added some stewed tomatoes. So, it was like a beef stew with carrots, potatoes and tomatoes. It was really good my DS 1 and DD liked it. DS one even had seconds. I was glad to be able to use up the pot roast Thanks for the idea.

In a pinch I use canned veggies.. 1 can of each: corn, peas, carrots, green beans, lina beans.. what ever your family will eat or what you have on hand.

You're lucky you have left-over pot roast! My hubby eats about 4 helpings of it for the first meal, then pot roast sandwiches with mustard every meal until it is all gone. I'm lucky to get a serving at all!

I make huge pots of vegetable beef soup and put it in the freezer. I use a bag each of frozen peas, corn and green beans and add cut up onion, carrots and potatoes (I leave the skins on for extra fiber). I put it all in a pot with the meat, a can of tomato juice, some garlic powder, bay leaves, a pinch of oregano and a little bit of cayenne pepper. Then I add water to make a good amount of broth depending on the amount of soup I want and some beef bouillon (sp?) and salt and pepper.

When I have left over roast I toss it in a freezer safe container. I do the same with veggies. When I want soup I just pull out the container toss it in the crock pot add a can of diced tomatos, bay leaf and any other veggies if needed. Cook all day and you have a great soup that is a great way to use your leftovers.
