leftover beef or pork cut into cubes makes a great fried rice!

Make 2 cups white rice and chill it. In a wok add oil, garlic, beef or pork cubes, diced small onion and saute, mix in rice and a little soy sauce, 1/2 box frozen peas, then beat 2 eggs in a bowl and cook them in the center of the rice til scrambled. I throw in any leftover veg we have.

Chicken pot pie variation.

One pack chicken breasts, approx. 2lbs.($2 for me, could be more without sales/coupons, but could also use leftover chicken, etc.)
Two packs frozen vegetables (peas & a mixed), $2.
One pack biscuits for topping $1 (could make this less by making own crust very easily, I am lazy sometimes).
Little bit of flour, butter, and a lot of chicken broth for the sauce, ~0.50-2, depending on if you make your own chicken broth.

Maximum: $6-7, makes a LOT. We are two people (not counting toddler) and it gives us 3 big meals plus enough leftover for 2-3 individual lunches. We are not big, big eaters, but I would still say 4 people could get at least 2 good meals out of it, or $3/meal.

I made this for the girls tonight and they loved it.

Cheesy beef stroganoff

Brown 1 lb ground beef and drain. Add 2 c water. Bring to a boil. Stir in 3 cups uncooked egg noodles. Turn heat down to simmer, covered, for about 8 minutes or until noodles are tender. Stir in 1 can cream of mushroom soup and 3/4 lb cubed Velveeta. I added salt to taste as well. Heat through, stirring occasionally, until cheese is melted.

One of our favorite things is to top baked potatoes with shredded bbq beef or chicken. The kind they sell in the plastic container, LLoyds i believe. they also offer coupons for this brand all the time.

To make it less than $5, I'd use half the bbq one night, on top of the potatoes with a little sprinkle of cheese, and the other half the next night for sandwiches and fries or chips.

2 meals in a row for $5.

I just but tube sausage the kind you cute to cook and in big pan breaking up as it cooks. When full cooked I add cooked rice and soy sauce. It is one of my family favorites!
