My fav easy veggie recipe is

Veggie Lasagna

only 4 ingredients: 1 30 oz. bag of frozen cheese ravioli, 1 box of frozen chopped spinach, 1 jar of spaghetti sauce, mozzerella cheese.

1. dethaw a bag of frozen cheese ravioli
2. dethaw a box of chopped spinach
3. in a 9 x 11 pan, spray with oil, put 1/2 cup of spaghetti sauce in bottom of pan and spread around.
4. put half the ravioli to cover the bottom of the pan,
5. spread half the jar of spaghetti sauce over top
6. spread the entire box of spinach over that
7. add a thin layer of mozz cheese
8. add 2nd half of ravioli as another layer
9. rest of spag. sauce
10. top with mozz cheese

Bake for 20-30 minutes or til golden brown on top at 350. KEY is to make sure everything is thawed out before you put it together, for the quick 20-30 minute baking time.

I discovered Boca burgers and Morningstar products (love the sausage patties) when I joined Weight Watchers. And, although I don't have any specific recipes to share, I just got a new Crock Pot cookbook that says you can chunk up Boca burgers in place of ground beef . . . I imagine Boca crumbles would work even more easily.

my kids love breakfast for dinner you can do so much with eggs!!
home made soups- chicken noodle, vegetable, brocoli and cheese, corn chowder i always make grilled cheese or BJ or tuna sandwiches to go with
beans and cornbread
stir fry with brown rice

Y'all haven't mentioned our family's all-time favorite meal - Tofu Tacos! You dice or crumble any kind of tofu (the firm water-packed version holds together best, but my family prefers the kind packed without water) and heat it with water and taco seasoning. Since you don't need to cook the tofu, only heat it, it's ready faster than you can get the lettuce, tomatoes and cheese ready!

We are vegetarian around here, so we eat meatless every night. My favorite meatless meals:

Mediterranean Pita Pizzas: Pita bread (homemade or store bought), hummus (homemade or store bought), feta cheese, and whatever toppings you like such as roma tomatoes, kalamata olives, and bell peppers. Then you can cook these up on a grill or in the oven. Easy, kids can make their own, and quite delicious!

Soup: I make many different types. I love Corn Chowder, Creamy Garlicky Potato Soup with Dill or White Cheddar Potato Soup, Curried Red Lentil Soup or Red Lentil Soup with Cumin, Pumpkin-Apple Soup, Chili (traditional--I don't use a recipe, so my chili is different every time), or White Chili, or Black Bean Soup. These are the recipes I make most often.

Pasta with a variety of sauces: pesto, marinara, black bean and tomato (kind of a chili spiced one), or just topped with fresh parmesan and butter (maybe a little garlic salt), or a different black bean one that has more of a salsa flavor than a chili flavor (with cilantro, lime juice, grape tomatoes, and red onion...it's pretty good), a fried spaghetti with a tomato paste/olive oil/herb-y sauce

Rice and Beans: there are so many ways to fix this. Many times I will make layered taco salads (I say "me," but this meal is actually dh's specialty).

Nacho Spuds...this is one of Rachael Ray's recipes...I make it meatless and use extra beans instead, although you could also use store bought or homemade meatless crumbles/veggie burgers, TVP, etc. I also add other nacho toppings to make it interesting.

Quesadillas or Taco Pizza, Grilled Cheese and Apple Sandwiches (spice the cheddar with a pinch each of cinnamon and nutmeg), any variety of PB&J (go to the PB Loco website for ideas...the Peanut Colada is a BIG favorite here)

My favorite "high maintenance meal" (I call it high maintenance because I have to make the seitan beforehand--homemade seitan is far more flavorful than store bought): Maple Balsamic Grilled Seitan.

Vegetable soup with bread and salad
Falafel (if you make it from scratch, it's cheap)
Black bean burgers (if made from scratch, it's super cheap) You can feed like 6 people for $5 and maybe even have leftovers

When I first read the title for this post, I thought to myself, "Self you don't ever cook a meal with out some sort of meat." Well after reading these great postings.....I do cook without meat ..... not a lot but sometimes.

Grill Cheese sandwiches and tomato soup
Breakfast for supper is always a favorite around here.....all like pancakes and eggs. glourious eggs....so much you can do there.
salads - sometimes with meat and some times without.

I know we usually start figuring out what we are going to have for supper by what meat we have out of the freezer or the fridge.....looking at all these great ideas, I see that I need to start this descision making process at the other end of the recipe. I have copied down several of the ideas and recipes that you have all shared.....Hopefully the family will not have me thrown out on the street for reducing their meat intake.....LOL

This sounds great, but pardon my lack of knowledge.....but what are lomein, pomodoro, matzo .......

not fond of corn so that is out.....but the rest I understand sounds good....

where to start is the question....
