Wow, I have not had these in years....I moved to Minnesota 21 years ago in August of this year....and back there we stuffed chili, jalapenos, bell peppers of any color with lots of different things......
When I first moved here everything I made was hot....spice hot...and they are pretty whimpy in MN when it comes to spicing things up. The first time I went to the store to buy Salsa I was dismayed that Medium was all I could find. the first time I had friends over for supper they told me to cook something special.....so I did...then we went out to eat and had left over chicken enchiladas for 2 days after wards. They were to hot for the guest to eat. Those were the days.
You have my taste buds just screaming MEXICAN food.....will have to get out the good cook books and whip something up......

When my daughter went on a class field trip to DC in fifth grade, one of the first things she said when she called home after the first day was, "The food here is so BLAND! It's like they never heard of any spices other than salt and black pepper, and they're afraid of the pepper. Thank the gods there was at least a bottle of Tabasco on the table!"

Oh how I remember that.....I do understand...it was horribly the first time I went to a restaurant....very bland. The first time I went to a Mexican restaurant in the area. It is a very popular restaurant and people told me how hot the food was and how good it was........well when I got there there was hope I thought nice looking place, right atmosphere GREAT MARGARITAS, but I was not impressed in the food.....that is what happens when you have the REAL THING.
For the longest time I carried spices in my purse when we went out so I could have food with flavor.....now I just go with the flow and spice it up at home.

Get the flavored hummus (my favorite is roasted red pepper) and spread generously on sandwich bread. Add some green leaf lettuce (or sliced cucumbers). It's super yummy! I stole this from a friend of mine recently and I didn't believe her that it was good until I tried it!
I also eat:
~Pasta (all kinds) with spaghetti sauce (no meat)
~Grilled cheese with sliced tomatoes
~Bean, cheese, and salsa burritos (refried beans and salsa are homemade)
~Goat cheese pasta with bacon (soooooo good - I know bacon is meat, but it's sooo worth it. The original recipe called for roasted asparagus so I guess you could try that if you don't want the bacon)
~ Ramen noodles with frozen veggies added
~ Velveeta shells and cheese with cut up potatoes (really filling - all 4 of us were stuffed on one box with 2 added potatoes)
~ Breakfast food (cereal for dinner is one of my son's favorite)
~ Mac N Cheese (another good filler in that is cut up hot dogs - the kids love it! I've also tried diced tomatoes which was really good, but I think I liked it more than the kids)
~ Peanut butter and honey sandwiches
~ Chicken salad on toasted bread (I know this has meat, but it is sooo good!)
I'm also going to try some little bean/cheese egg rolls (made with egg roll wrappers). I'll fry them up with a little butter and use salsa for dipping. I'm serving with Spanish rice. I haven't tried this yet, so I'm not sure how it will turn out. Those little egg roll wrappers could be filled with a ton of stuff though.
We also made some pasta the other night and melted butter in it. Crushed up some leftover bacon and added some lemon juice and capers we had on hand. Topped with parmesan cheese. It was a total hit, especially if you love bacon and like the strong flavor of capers!

My DH likes to make himself grilled cheese sandwiches; limited "cooking" skills required. DS loves my banana pancakes and eggplant parmesan (he thinks it's pizza--he's not quite 2). We tried ratatouille, but we didn't care for it that much. Otherwise, we like scrambled eggs w/cheese, mac & cheese, shrimp w/ warm fruit salsa (new recipe--we all love), and anything with the new homemade alfredo recipe I found on the Internet!
It's amazing the amount of cooking I've done in the last couple of months to cut our expenses, and I really enjoy it! I just wish that a.) I had a bigger kitchen with more counter and cabinet space, and b.) that I didn't have just Tuesdays and Sundays off to do all my shopping and cooking. Still working on getting DH to help out with the cooking part.......

We like grilled cheese sandwiches, soup, eggs, pancakes, waffles, veggies, and I am sure there are more I am not thinking of right now.

I don't know if it is a thing of the south but in my family we love eggs and rice. You scramble eggs and right before they cook throughly add rice. We all love it.

baked potatoes w/ broc and cheese (if you have extra $ add bacon)
pasta salad
fried rice (onions, green peas and 1 egg) and sauteed green cabbage
grilled cheese and soup
pancakes with fruit
pasta, sauce with homemade cheese bread and green salad

-Beans and rice w/ cheese and a nice salsa... yum
-Cheese quesadilla w/ avocado
-Tuna w/ corn, mayo, n cubed tomato w/ tostadas
-French bread w/ beans, cheese, salsa n avocado
-Moyetes-- French bread (layered) 1st spread butter, 2nd beans, 3rd mozarella, then you bake it.
-Fideo soup w/ garbanzos
