Breakfast for dinner
toasted/grilled cheese sandwiches
beans and cornbread (I like this more than the kids)
pasta and sauce (can be spaghetti or alfredo)

We like strombolli (pizza crust with sauce and whatever toppings we have, folded on top of itself & baked). Potato & vegetable soup, nachos (great way to use up extra taco meat if you have it), layered taco dip with chips, hashbrowns w/ scrambled eggs, green peppers, onions (left over ham, sausage or bacon if you have it) fried together and topped with cheese. Garden salad, tuna salad with crackers (my kids don't like bread usually), pasta salad which is funny shaped noodles with whatever veg we have, olices if available, shredded cheese with italian dressing. Some nights for fun we do cheese and crackers, different cut up fruit ,depending on what we have, and a fancy drink (juice with sprite to make it bubbly) in pretty wine glasses and we eat of fancy plates and eat by candle lite.
Please keep in mind I'm cooking for 3-4 kids and no husband because he's at work. Otherwise he would throw a fit because these aren't real meals.

French bread pizza - we always have some cheese and peperoni in the freezer and some sauce in the pantry. You can add whatever else you like as well.
Spaghetti or any other pasta on hand with sauce
Fried egg sandwiches are a favorite - DH's specialty - grilled with the bread and cheese and ham or bacon if we have it but still really good even without it.
PB and J sandwiches
I love the idea of French Toast for dinner - haven't done that one yet but have done pancakes or waffles - DS loves to watch/"help".
We are also doing more egg dishes at night - love them because you can basically toss in whatever else is leftover in the fridge - we are going to do this tomorrow night.
I think rice and beans are going to be seeing more action as well - I love them in burritos with a little cheese.

I need to get better at making meals without meat. I can only think of a handful. I know that if I start making too many meals without meat and dh notices, than I will have to tell him why and than he will just want to go get some deer/elk meat from his dad. Blech! I can not eat that stuff. I ate it once and got deathly sick from it. I was hugging the sink while sitting on the toilet all night long. Since than I will not touch the stuff!
Breakfast-that is an easy one. Dh doesnt like breakfast for dinner very often.
Grilled cheese and tomato soup
Fettucini alfredo-I usually make it without adding anything else to it, but than everyone is starving later on in the evening. And that is after they have all had huge servings.

-Alfredo (I use spaghetti noodles since I use them in various dishes). I add
spinach/tomato or imitation crab.
-Lasagna (veggie or cheese)
-Baked Ziti
-Egg & Veggie sandwich (I use toast, tomato, lettuce, onion, egg, and
avocado.) ---Then, I freeze the leftover tomato and onion for dishes later on, like in chili.
-Baked potatoes!!
-Tuna Noodles (helps extend the tuna)
-Hash Brown Casserole
-Pasta AMAZING! (pasta, spinach, red pepper, FETA cheese, and chick peas)
-Refried Beans with Cheese
-Pizza Bagels!
-Bean Burritos
-Enchiladas

I make a vegetable soup that is quite enjoyable. Sometime my children don't even notice the lack of meat! The recipe is very simple, and can be adjusted to fit your preferences with ease. I substitute in fresh vegetables that are on sale
1 bag frozen mixed vegetables
1 large can green beans
1 can black beans
1 can red beans
1 can diced tomatoes
enough chicken broth to cover previous ingredients in a crockpot.
I add rice, noodles, or potatoes to make this last longer.

Funny I always considered seafood meat. Wait a minute during lent I don't though.
