Last night I threw some diced chicken in two packages of chicken ramen noodles. I sauteed some diced carrot and onion to go in as well, and some chopped fresh parsley. It was a yummy!

I love this one too! I make the stuffing on the stove top then mix in cooked chicken, cream of mushroom, milk and some chopped celery for crunch. Add grated cheese on top and bake in the oven for 30-40 mins. Yummy.

We do mac and cheese with chopped hotdog in it. The trick is to add the chopped hotdog the last minute or two to the boiling macaroni. It adds a good flavor to the mac and cheese.

Also, Honey Baked Ham sells ham bones for $5 and they still has a ton of meat on it. They just use up the spiral cut part for their in house sandwiches and sell the remainder on the bone. So we use some of the meat for sandwiches and then you're left with a really good ham bone for soup. Makes the best split pea.

A fav here is Fried potatoes and hot dogs. Fry up some potatoes, add onion and chopped hotdog and fry right in the same pan! YUMMY!

Green peppers stuffed with tuna salad

Chicken salad in tomato cups

Omlets

Pizza skillet-noodles,pizza sauce and some mozz cheese

Breakfast burritos

I like to make my own version of Shepherd's Pie. It is cheap and pretty healthy, too! Just make 1 pound ground beef (or turkey) and brown. Then mix with spaghetti sauce and stir in 2 cans of mixed veg. Put in a casserole and put 2-3 cups of instant mashed potatoes (with an egg mixed in) and spread those on top. Bake for 1 hour or until a little browned on top!

We just had beef & noodles:

boil beef pieces (ask the butcher for boiling beef - it has a fair amount of meat and lots of fat) for a couple of hours. remove meat and let broth stand in fridge overnight. remove the fat from the top, add the meat back in and boil some more with an onion and a couple of cloves of garlic

homemade beef noodles: any recipe for homemade egg noodles. i use sprouted flour, but any type of wheat flour works fine. roll out and cut into sqares, let dry on counter for 30 minutes or more

bring the broth/meat to a rolling boil and add the noodles. cook for 12 - 15 min, test for desired done-ness.

wicked cheap with the homemade noodles... eat with a small salad.

Yesterday I made a casserole with mac and cheese, diced ham (leftovers), and peas. It cost about $10 and everyone was full.

POOR MAN SURPRISE (my dh named it in his single days)

3 packages of raman noodles crushed cooked according to directions and drained - $0.30
3 hotdogs, sliced - $0.30
2 slices of cheese or shredded whatever you have on hand $.20
1 tbsp of butter $.10
Mix all ingredients together and serve (dh likes to add hot sauce)

My boys love it so much they ask for it once a week and it costs less than $1.00 to make (course it isn't that healthy - but it is cheap! )
