I want to get into this. I logged onto this to see if there were any recipes. guess I need to go to another thread for recipes. I can see where it would save me a ton of $$ DH has a way of throwing my schedule all out of whack and therefore my cooking sometimes goes by the wayside. We end up eating out when we really should be eating at home b.c I already have purchased the groceries.

I try but don't do it as often as I would like. Today though I made a triple batch of pasta shells, one was for dinner and the other two are now in the freezer!

not every day but often enough. I usually cook 2 times a week 2 or 3 different meals and make enough to freeze so we have for up coming week. With 8 young kids and dh working late hours i cant be in kitchen every day cooking a meal between sports activity's home work and just spending time with them. Not enough time in a day for it all.

Sometimes I will make a whole buch of zitis, tatertot hotdishes or chicken casseroles and freeze them. My problem is that I never remember to take them out to thaw before we need them.

I make and flash freeze 6 lbs. or so of cooked meatballs at a time and then take them out as I need them. I also make tons of chicken soup and freeze it in individual portions. I bought a FoodSaver and LOVE it. The food doesn't come out all freezer burned and because it looks good, somehow it makes it much more appealing.

I start small - like today I thawed 2 packages of stew meat and browned them to put in the crock pot to plug in the morning with a can of brown gravy and packet of onion soup mix. Tomorrow night we will have it for dinner over mashed potatoes. I will freeze the leftover meat/gravy and then next week....I will add a bag of frozen veggies, put it in the crockpot again = ta-da...a hearty beef veggie soup.

I also individually freeze leftover pasta and sauce in individual containers and we pull them out for lunches when needed for a fast microwave lunch.

I always cook a double batch of hamburger meat when I am making a ground beef meal. Putting the 2nd half in the freezer for the next time I want to make a quick batch of tacos or casserole. 3 minutes in the microwave thaws it easily.

Start small. The thought of cooking a month of meals in one day stresses me out.

I usually will put left overs in the freezer in individual containers. I usually cook dinner 3-4 nights a week....at least that's my goal. And when I cook I always make 2-3 times the amount. We eat one portion for dinner, one portion goes into the fridge for lunch the next day, and the other portion goes into the freezer.

So true! The thought of true Once a Month Cooking is kind of daunting. Think of meals you already make that are easy to double or triple and start there. If you do a search on OAMC or Freezer Meals, you'll find all kinds of good ideas but I think you'll have a greater chance for success if you start small. Like I said, I just do soup and meatballs and it makes me feel like I'm ahead of the game. Oh, and I marinate steak tips in bulk too. They're fast to defrost and easy to cook.
