I do OAMC cooking...(though I have been caught with my pantry and freezer down lately) The great thing about the "never remember to take them out" syndrome is that it's easily treatable. Just put in the oven for a bit longer (usually 45-60 minutes longer or so... do check your temps though to make sure it's cooked through...) the only issue I have had so far, is that with some of my pastas, like manicotti, if the sauce runs off the pasta, the exposed pasta is more crunchy... an easy solution to this is to put foil over it and or start it on a little lower temperature, then turn it up to the correct one.
And for the person that was looking for recipes... there are several sites offering these. Type in OAMC cooking, bulk cooking, freezer cooking, make-ahead recipes... you'll come up with a ton. Also there are several OAMC cookbooks out there. If you want more information, let me know...
