I am going to make this today. I love kalamata olives (already pitted!) so I will use those and I bought feta that has a sundried tomato flavoring. I can't wait to try this in a pita!

I made this for lunch for dh and I, we LOVED it! I filled a pita with spinach leaves and the greek salad. Dh even had an extra little bowl later for a snack.

I am glad you & your husband like it.We do it with spinach leaves sometimes too if we have it.I am the lucky one when Dh was working what ever was left I got it for lunch the next day

Dh and I lived in Greece for 3 years and ate Greek salad with every meal while we lived there. It's always nice to see variations to this dish. Mainly ours consist of:
-Wedged Tomatos
-Cucumbers
-Green Bell Pepper
-Onions
-Olives
- Huge chuck of Feta Cheese on top
- Thyme as seasoning (they put it on everything)
And for dressing: Olive oil

Use your bread to sop up the olive oil at the bottom of the bowl, Yum!!!

Wow, that sounds really good!

Just a question, though - how prevalent is the cucumber flavor in the salad? I don't like cucumbers, but can handle them in tzatziki sauce.... Could I leave them out?

You could since you don't like them.You could leave it with only what else is in it or you could add in some bell pepper or some other kind of veggie you like raw.

Sometimes we make the dressing and Dh loves it over salad.It only makes enough for a couple salads and toss it with the lettuce then add in your veggies and it makes it stretch farther.
