Summer vegetable salad

2 tomatoes, chopped
2 cucumbers, peeled and sliced
1 onion, cut into rings, I like the purple
1 green bell pepper, cut into strips
1 yellow bell pepper, cut into strips
Cut all vegetables and put into bowl. Mix 2/3 cup water, 2/3 cup sugar, and 2/3 cup vinegar. After sugar dissolves, pour over vegetables. Cover and put in the fridge.
This is better the longer in sits in the fridge. Sometimes I also will add chopped or shredded carrots.
