Default Strawberry Romaine Salad

Strawberry Romaine Salad

1-cup vegetable oil

¾ cup sugar

½ cup red wine vinegar

2 cloves garlic, minced

½ teaspoon salt

½ teaspoon paprika

¼ teaspoon ground white pepper

1 large head romaine lettuce

1 head Boston lettuce

1-pint strawberries, sliced

1 cup (4oz) shredded Monterey Jack Cheese

½ cup walnuts

Combine first 7 ingredients in a large jar. Cover tightly, and shake vigorously. (Store up to 1 week in refrigerator) Tear lettuce into bite-size pieces. Combine both lettuce, strawberries, cheese, and walnuts in a large bowl. Shake dressing and pour over salad.

Ramen Noodle Salad

1 lb. bag of broccoli slaw
1 cup salted sunflower seeds
1 cup sliced almonds - toasted until lightly browned
2 pkg. Ramen Soup ( Oriental or Chicken)
crush noodles - DO NOT COOK
Dressing:
Mix these together:
3/4 cup oil
1/2 cup sugar
1/3 cup cider vinegar
Seasoning packets from soups
Mix everything together and refrigerate 2 hours or more

Spinach Apple Salad

2 Tablespoons cider vinegar
2 Tablespoons vegetable oil
1/4 teaspoon salt
1/4 teaspoon sugar
1 cup diced unpeeled apple
1/4 cup chopped sweet onion
1/4 cup raisins
1/8 cup walnuts (optional) my added touch
2 cups torn fresh spinach
2 cups torn romaine
In a small bowl, combine vinegar, oil, salt and sugar; mix well. Add apple, onion, walnuts, and raisins; toss lightly to coat. Cover and let stand for 10 minutes or overnight. Just before serving, combine spinach and romaine in a large salad bowl; add dressing and toss. Yield: 4-6 servings

Broccoli Salad

Ingredients:

7 cups heads of fresh broccoli

1 c. chopped red onion- about 1 large onion

4 slices of turkey bacon- cook and chop (I cut up with kitchen shears)

¼ c. raisins

1 c. Hellmann’s Light Mayo

1 c. Splenda (I used big bag for baking/cooking)

2 tbsp. white wine vinegar

Mix all ingredients and let sit in fridge up to 24 hours- the longer it sits, the better it is!

Get crazy and add cooked chicken for a dish.

You can also add sunflower seeds or broccoli slaw for a change.
