Broccoli Salad

Ingredients:

7 cups heads of fresh broccoli

1 c. chopped red onion- about 1 large onion

4 slices of turkey bacon- cook and chop (I cut up with kitchen shears)

¼ c. raisins

1 c. Hellmann’s Light Mayo

1 c. Splenda (I used big bag for baking/cooking)

2 tbsp. white wine vinegar

Mix all ingredients and let sit in fridge up to 24 hours- the longer it sits, the better it is!

Get crazy and add cooked chicken for a dish.

You can also add sunflower seeds or broccoli slaw for a change.

I make this, except I use all the fattening things....mayo, sugar, real bacon, etc. My only other advice is I DO mix the broccoli, raisins, & onions up and put the dressing on at least a few hours before so they absorb some of the drsg and soften some. But I DON'T put the bacon on until just before I serve it because I don't like the bacon to get soggy and think it's better when it's still crunchy. I took this as one of my things to my inlaws christmas eve and my family's christmas day get togethers. Everyone loves it.

I also recomend not mixing the bacon in until the last minute, soggy bacon yuck!

I do mine with these things,

broccoli cut up,
bacon bits(they don't get all soggy),
onion diced up,
ranch dressing,
cheddar cheese cubed up,
I have sunflower seeds on the side and who wants them can add them.Not everyone likes them on it.

We eat alot of this in the summer.
