Please post your soup recipes! I'm trying to install a soup or babke potato night to save on money. All recipes would be greatly appreciated.

Here's the recipe I use!

Baked Potato Soup

1/2 lb bacon
1 medium onion, diced
1 clove garlic, chopped
1 c. celery, chopped
5 lb potato's, peeled & diced
8 c. water
6 bouillon cubes
4 ounces cheddar cheese, shredded

Fry bacon until crisp, remove bacon from pot, drain fat reserving about 2 tablespoons. Fry onion, garlic, and celery in bacon fat until tender, not browned. Add water, potatoes, and bouillon and bring to a boil. Reduce heat to simmer, and cover, simmering until potatoes are tender. Stir in cheese until melted into soup. Stir in crumbled bacon, and serve.

This recipe serves about 6 to 8.

I like taco potatoes.

Microwave potatoes, slice in half, scoop out potatoe part and save for another meal.

Brush skins with butter and bake at 425 for 30 minutes. Make tacos per season package.

Put taco meat in skins, top with cheese, chives, bacon, anything you would like, then with sour cream.

I make a huge amount and freeze them. I use the potato meat for mashed potatoes or soups.

I love pumpkin soup but don't have the recipe in my head at the moment.
