I made chicken salad last night for dinner the same way I always have......BORING! *I usually add chicken, celery, mayo (occasionally Miracle whip instead), onions, pickles, salt, pepper. *If I am not putting it on sandwiches then I add elbow macaroni.

I got to wondering how ya'll make yours? *I would love to find some different recipes to change things up.

I nevr put mine on sandwiches--kids would never eat it. I do however, add grapes, pineapple chunks, green onion, I also use rosamarina(looks like rice). I add lemon juice also.wait I'll go get the recipe......


I'm back, but be warned this is a large salad. I haven't been very good at making it in smaller batches.

1 1/2 cups uncooked rosamarina
3 cups cut up chix/turkey. I will also substitite cans of white chicken
3 cups thinly sliced celery
3/4 cup sliced green onion
1/2 lbs green seedless grapes
1/2lbs red seedless grapes
2 cups pineapple
3 cups mayo- can be as low as 2 cups
1/4 cup lemon juice
1/2 tsp salt
1/2 tsp white pepper
cashews

cook rosamarina as directed on package. drain. rinse with cold water, drain. in large bowl combine rosamarina, chix, celery, green onion, grapes and pineapple. in small bowl combine mayo, lemon juice, salt, pepper, fold into chix mixture. refrigerate covered. add cashews just b4 serving.

We do sliced up white seedless grapes, too, and also pecans chopped up. It is YUMMY

I don't make it very often but like to spice it up more. I add in some paprika, chili powder, curry powder, parsley - or any combination. Try just a bit at first to see if you like it.

I have been adding green olives to my chicken salad and tuna salad lately. Dh loves it that way.

All of these sound great! I am getting really hungary. I have seen walnuts, grapes, peppers, cashews, pamento. Most of it just adds color and a dash of flavor I think. Kids like it really really plain, or they eat something else entirely

Allgirls - I have never heard of rosamarina. *Is it just in the area with the rice and stuff?
