We always do a few fry picnics through the summer(fried green tomatoes,fried zucchini-grilled onions and steak with peppers)and we always have to have a few of these.........


1 large onion, 1/4 inch slices
1 1/4 c flour
1 tsp baking powder
1 tsp salt
1/2 tsp garlic powder
1/4 tsp cayenne
1/4 tsp paprika
1 egg
1 c buttermilk, or as needed
1 quart oil for frying, or as needed
season salt optional
Heat the oil in a deep-fryer to 365

Separate the onion slices into rings, and set aside.

Mix flour, baking powder and salt.

Dip the onion slices into the flour mixture until they are all coated; set aside.

Whisk the egg and buttermilk into the flour mix.

Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping.

Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs,toss crumbs over the ring to coat. Repeat with remaining rings.

Deep fry a few at a time til golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

CAUTION~~~~~
this recipe,albeit some work....WILL make you wanna make these CONSTANTLY!!!!

these were pretty good, but fresh breadcrumbs don't work very well. and i forgot to add the spices. i love onion rings, though, and this recipe's a keeper!
