5 eggs
4 slices bacon
2 Tbs dijon mustard(this is a key ingr- )
1 c mayo
3 stalks celery, minced
2 lbs small potatoes
2 Tbs chopped fresh parsley
salt and pepper

Cook and cool potatoes
Cook and cool eggs.

Place 3 eggs in big bowl.(save rest)

Mash the eggs with a fork and stir in the mustard, mayonnaise, celery, salt and pepper. Set aside.

Cook bacon slices in the microwave for about 4 minutes(til crisp) Crumble 2 of the bacon slices into the mayonnaise mixture. (Save rest for garnish)

Peel and chop the potatoes, and stir into the bowl until evenly coated. Slice the 2 remaining eggs, and place on top of the salad. Crumble the remaining bacon over the eggs, then sprinkle parsley over the top.

I have always wanted to learn how to make potato salad... this sounds like a perfect side dish for our dinner out on the patio tonight!

I don't know where you find all these yummy recipes - I hope you don't run out anytime soon! I have tried several and loved them all. Thanks so much for taking the time to post them!

Well I made it and it was great! DH has always said his best friend's wife makes the best potato salad... he now says I do!!
